The San Diego Sheriff’s Dept put on a c ourse a couple of years ago with a trainer that was able to do all sorts of amazing things in real time. Not sure if they’re still around but they would be aa GREAT source for training. Attached file I received at the class. If still active PLEASE do not distribute to non LE.

The IACP is also a resource, they might be able to point you at training courses.
